It appears a dark forest green, yet radiates a clear light. The aromas are splendid, reminiscent of tomato, eggplant, capers in the rock, and mint, closing out a great product. On the palate, it expresses all its strength and vigor, but without overly bitter or particularly spicy peaks. The green of the olive and artichoke leaves lingers, but is balanced. This is a perfect oil. Well done Francesca, after so much sacrifice, you have achieved the highest recognition!
